Store, unwashed, in the refrigerator for at least a month, maybe two, but why wait that long? Wash and dry before eating. If you only use part of the head, wrap what’s left in an airtight bag to retain freshness.

FAVE WAYS TO PREPARE

-Char in a cast-iron skillet 'til deeply brown and very tender. Serve on a bed of hummus, and top with lots of fresh herbs, something pickled, and salty, roasted peanuts.
