As with any tender green, the sooner you eat it, the better! However, you can store spinach in an airtight plastic bag for up to a week. If leaves lose crispness, submerge them in an ice bath for 10 minutes, and then give them a spin in a salad spinner to fluff and dry. Moisture is the enemy of leafy greens.

You can always blanch and freeze spinach for future soups, stews, pasta, or eggs….the world is your oyster!

FAVE WAYS TO PREPARE

-Wilt into scrambled eggs with garlic

-Swap for basil in spinach pesto

-Blend into a green smoothie with avocado and ginger

-Mix with other tender greens and herbs, and lightly dress in a Honey Mustard Vinaigrette.
